The seasoning blend I used to create an original Famished Fish recipe, with the help of Healthy Solutions Spice Blends‚ĄĘ, was their Encrusted Haddock blend. This seasoning has dehydrated onion and garlic, a mix of spices of what I think is oregano and maybe tarragon, cranberry and black pepper. Nothing artificial and no MSGs. Delicious stuff here. Delicious stuff.

I started with fluffy buttermilk style biscuits with the special herb blend and softened dried cranberries. The soft biscuits are paired with lean homemade chicken sausage patties with a touch of sweet brown sugar and savory seasoning. Topped with a gently fried egg, spring greens and tangy feta cheese, this breakfast sandwich is pleasing to the tastebuds, simple to make and perfect for a weekend brunch.

Sweet Chicken Sausage Breakfast Biscuits

Ingredients

    For the Herbed Cranberry Buttermilk Biscuits

  • 2 and 1/3 cups flour, divided
  • 2 Tb baking powder
  • 1 tsp salt
  • 2 tsp Healthy Solutions Encrusted Haddock Seasoning Blend
  • 5 Tb shortening
  • 1 Tb honey
  • 2 Tb buttermilk powder
  • 1 cup low fat milk
  • 1/3 cup dried cranberries soaked in 3 Tb hot water
  • For the Sweet Chicken Sausage Patties

  • 1 lb ground chicken or turkey
  • 1 Tb Healthy Solutions Encrusted Haddock Seasoning Blend
  • 1/2 tsp garlic salt
  • 1/2 tsp pepper
  • 2 Tb brown sugar
  • For the Sandwiches

  • 8 Eggs
  • 2 cups baby spring greens
  • 4 Tb crumbled feta cheese

Instructions

  1. Preheat oven to 425F.
  2. In a large bowl, whish together 2 cups flour, buttermilk powder, baking powder, salt and spice blend. Cut in the shortening with a pastry cutter until mixture resembles large peas. Add the honey and milk and mix just until combined. Cover with a paper towel and set aside to rest for 30 minutes.
  3. Meanwhile, in a large bowl combine the ground chicken and remaining ingredients and mix well. Form mixture into 8 patties about 1/2 inch thick. Set aside.
  4. Heat a griddle to 350F. Spray with nonstick cook spray. Brown chicken patties for 4 minutes on one side. Flip and brown 4 minutes more. Cover with foil to steam and cook through another 3-5 minutes until no longer pink. Set aside.
  5. Meanwhile, dust a cutting board with 1/3 cup flour. Turn dough out onto floured surface. Add soaked and DRAINED cranberries. Gently fold cranberries into dough. Knead about 8 times, turning one quarter turn and folding over each time, pressing with heels of hands, until smooth.
  6. Roll dough out to a rectangle about 3/4 inch thick. Cut with 3 1/4 inch biscuit rounds into 8-9 biscuits. Reroll as needed. Transfer biscuits to a baking sheet. Bake at 425F for 10-14 minutes until lightly browned. Remove from oven to cool.
  7. Wipe grill clean. Spray with nonstick cook spray. Crack 8 eggs on griddle. Sprinkle with salt and pepper and cook 3 minutes on one side. Flip over carefully and cook until desired doneness.
  8. To serve, split open biscuit, top with 1/4 cup baby greens, one sausage patty, one egg and 1/2 tablespoon crumbled feta cheese. Top with other biscuit half and serve.

Ingredients

  • 4 large slices sourdough bread
  • 4 oz sliced brie cheese
  • 1/4 cup dark chocolate chips
  • 1 tsp fresh basil from a tube
  • 2 Tb Just Hemp Foods hemp seed oil (or olive oil)
  • pinch sea salt

Instructions

  1. In a small dish, mix together the hemp seed oil, basil and sea salt.
  2. Using a basting brush, brush the oil mixture on the outsides of the sourdough bread.
  3. Sandwich 2 oz of sliced brie and 2 Tb chocolate chips inside each of two bread slices.
  4. Place each sandwich (there will be two) on the griddle set over medium and grill on each side, turning after 2 1/2 minutes, until golden brown.
  5. Slice each sandwich in half to serve 4.

These Mushroom Swiss BBQ TriTip Sandwiches are filled with juicy layers of beef tri tip glazed with sweet bbq sauce and topped with peppered grilled mushrooms and smoky swiss cheese. All this crammed into a soft Kaiser roll.

Ingredients:
2 lb beef tri tip roast, trimmed, rinsed and patted dry
2 tsp dry steak seasoning
1/2 cup BBQ sauce
1/4 cup hot water
1 lb sliced mushrooms
6 slices swiss cheese
6 Kaiser rolls

5 large russet potatoes, scrubbed clean
1/2 tsp salt
1/2 tsp pepper
1 cup boiling water
4 Tb butter
2 tsp garlic paste
2 tsp parsley paste
1/2 tsp salt
1/3-1/2 cup warm milk

Directions:
Preheat the oven to 425F. Score the tri tip roast crosswise. Rub the dry steak seasoning into the roast.

Spray a casserole dish lightly with cooking spray. Place the seasoned roast and top with BBQ sauce. Pour the warm water over the roast and cover.

Bake for 30-40 minutes until the thermometer registers 160F. Remove the roast to rest 10 minutes before slicing.

Transfer to a stand mixer and whip the potatoes lightly with the 4 Tb butter, additional 1/2 tsp salt, garlic and parsley pastes. With the mixer running, slowly stream in the warm milk and mix until desired consistency.
While the potatoes are cooking, saute the mushrooms in a large skillet that has been sprayed with cooking spray, until desired tenderness over medium heat. Season with dash salt and pepper.

No really. My family and I spent the morning searching for gold in our house. My baby girl’s tiny gold bracelet that is. I looked at her tiny wrist and noticed it was missing, as she just had it on yesterday. I’m crossing my fingers that I find it in our dryer’s lint trap. Gold is so expensive nowadays. I need a leprechaun to send some luck my way!

Well since I can’t find the pot of gold, at least I can find the pot of flavor.

You ever make something so totally amazing you think you hit the flavor jack pot? That is my take on these Grilled Hashcake Rueben Sandwiches. Buttered sourdough bread sandwiches melting cheddar cheese, dilled corned beef hash and potato cakes, and crisp coleslaw dripping with homemade Russian dressing.

Yeah, that’s my kinds of St. Patrick’s Day lunch! And you don’t even have to slow cook the corned beef or boil the potatoes. The most prep work you’ll spend on these sandwiches is 20 minutes-tops. The secret? I cheated with a can of corned beef hash. My dad worked a lot when we were kids and corned beef hash was one of his “go-to” foods to feed my brother and me. I actually love the stuff! Especially camping! My boys even enjoyed the hashcake patties a la carte. I myself scarfed down this juicy – almost burger like – delight in a heartbeat!

This recipe makes 12 decent sized half sandwiches, or 6 very full sized large sandwiches. Choose your hunger level and let’s get cooking!

Grilled Hash Cake Rueben Sandwiches

Ingredients:
-For the Russian Coleslaw
3/4 cup olive oil mayonnaise
1/3 cup ketchup
1 tsp Wasabi powder
1/2 tsp celery seed
1/2 tsp salt
1/4 tsp pepper
1 Tb A1 steak sauce
2 Tb cider vinegar
1 Tb sugar
2 Tb finely diced white onion
1 14 oz package coleslaw mix
-For the Hash Cakes
1 15 oz can corned beef hash
1 cup flour
2 eggs
1 tsp dill weed
1 tsp pepper
1/2 tsp salt
2 Tb whole grain mustard
cooking spray
12 slices sourdough bread
12 Tb butter with canola oil spread
6 oz cheddar cheese, grated

Directions:
In a medium bowl combine the Russian coleslaw ingredients, except the coleslaw mix. Mix well with a wire whisk.

Fold in the coleslaw mix and set aside.

In a separate bowl, combine the can of corned beef hash with flour, eggs, mustard and seasonings. Mix well with a fork.

Heat a nonstick griddle over medium heat. Spray it lightly with cooking spray. Using a large scoop, scoop the hash mixture onto the griddle. Spray the tops of the scoops with more cooking spray and press with the back of a nonstick turner to make a patty.

Cook about 3 minutes until lightly golden. Flip over carefully and cook about 2-3 minutes more. Repeat for remaining hash mixture, making 12 patties. Set aside on plate. Cover with a clean towel to keep warm, if desired.

Cut each slice of sourdough bread in half. Spread 1/2 Tb of butter on one side of each slice of bread. Place buttered side down on heated griddle. Sprinkle 1 Tb of cheese on each bread slice. Cook about 2-3 minutes, until desired golden color is achieved on bread bottom. Place one hash cake on one bread slice, followed by a large scoop of Russian coleslaw.

Fold over the other bread half to create a sandwich. Transfer to a cutting board and slice in half once more to serve. Serve immediately with pickles, if desired. Refrigerate unassembled leftovers separately.

Cook on a preheated griddle over medium heat, that has been lightly sprayed with cooking spray. Cook for about 4 minutes per side, until no longer pink. Place the cheese slices on the meat to melt slightly. Remove from heat.

Combine the mayonnaise and hot sauce. Cut the rounded edge of the hot dog buns off and then cut each in half. Cut through the entire bun to open.

But have you tried this? No cans, no starter sauces, just good fun vegetables and spices and some slow simmering time for a meal of extra saucy, extra tasty, Home Style Sloppy Joes.

I made these Sloppy Joes on one of my crock pot frenzies of waiting for baby. A bunch of goodness tossed in my slow cooker and we had dinner by day’s end. Don’t let the ingredient list get to you—it’s worth it. This makes a double batch, so freeze some for later, use the leftovers for Sloppy Joe Lasagna (recipe coming soon)¬†or cut the recipe in half.

Home Style Sloppy Joes
Ingredients:
1 lb lean ground beef
12 oz ground pork
2 bell peppers, finely diced
1 white onion, finely diced
1 carrot, finely grated
1 14.5 oz can diced tomatoes in liquid
1 7.4 oz carton seasoned tomato sauce
1 6 oz can tomato paste
6 Tb brown sugar
1/4 cup flour
2 Tb white vinegar
1 Tb whole grain mustard
2 tsp chile powder with lemon
1 tsp Worcestershire sauce
1 tsp garlic powder
1/2 tsp salt
1/2 tsp pepper

In a large pot or in a slow cooker with a cooking bottom like my Ninja Oven, combine the ground beef, ground pork, diced bell peppers and onions and grated carrots. Cook and stir over medium until browned.

Stir in the white vinegar, whole grain mustard, chile powder with lemon, Worcestershire sauce, garlic powder, salt and pepper.

Another month and another Secret Recipe Club reveal.

I went for the Beer Batter Bread. ¬†I mean, I could have gone for some Chai-Spiced Scones¬†or the more delectable looking Bailey’s Brownies. This girl loves her goodies with some goodies, if you know what I mean.

This girl being ¬†Ellie Hoboken¬†who blogs over at The Hobo Kitchen.¬†¬†Ellie resides in New Jersey, but is originally from the Bahamas, where a lot of her dishes such as the¬†Bahamian Fire Engine¬†are inspired from. And in all inspiration from her spicy side, I spiced up this Beer Batter Bread after drooling over¬†her post on a¬†Jalape√Īo Relleno Bake.

This Beer Batter Bread is hearty, moist and every bit what you would expect out of a traditional beer bread.¬† The beer gives the bread a sweet and savory tang and you won’t want to stop at one slice. Try topping the bread with some halved jalapenos for a pretty look and a spicy kick. Or slather it with some jalapeno popper butter for even more pizazz.

Ingredients:

Jalapeno Popper Butter (Optional):
1/2 cup butter, softened
3 oz fat free cream cheese, softened
2 oz Colby Jack cheese, finely shredded
1/4 tsp paprika
3 whole pickles jalape√Īos, seeded and chopped

Beer Batter Bread:
3 cups flour
3 Tb brown sugar
1 Tb baking powder
1 tsp salt
12 oz can room temperature beer
2 whole pickled jalape√Īos, sliced in half lengthwise
4 Tb butter, melted

Directions:

Preheat the oven to 375F.

Grease a loaf pan with cooking spray.

In a medium bowl combine softened butter, cream cheese, cheese, paprika and diced pickled jalapenos. Cream together well and refrigerate.

In a large bowl whisk together the flour, brown sugar, baking powder and salt.

Spoon batter into the prepared loaf pan, spreading evenly. Top with halved pickled jalapenos, if desired. Brush with melted butter.

Bake for 35-40 minutes, until toothpick inserted in center comes out clean.

It’s another month and another Secret Recipe to reveal via The Secret Recipe Club.

The month of June brings a season of barbequing which means lots and lots of grilled goodies. So I thought it only perfect to make Heather’s Pineapple Beef Burgers with Spicy Sriracha Mayo. If only I had remembered to pick up¬†the Sriracha-doh! But I improvised and processed a blend of garlic chili paste, chili paste, tomato paste, vinegar and water and what would you know-the taste was very similar if not almost spot on. So I went with that. And I feel this gave our burgers just the right flavors to still be able to call this a Sriracha burger.

Now on to the burger. This burger starts with a juicy beef patty with bits of onion scattered inside with tasty Worcestershire sauce and a kick of garlic. It is topped with creamy avocado, sweet pineapple and a spicy zing of sriracha mayo. All jammed inside of a soft burger bun. Yea, my mouth watered too.

Ingredients:
1 pound ground beef
1 egg
1/4 cup panko bread crumbs
1/2 cup chopped green onion
1 tbsp Worcestershire sauce
2 cloves garlic, minced
pinch of sea salt and pepper
1/4 cup shredded mozzarella
4 pineapple rings
1/3 cup mayo
3 tbsp sriracha
4 whole wheat hamburger buns, toasted
toppings: avocado, grilled onion, spinach, sliced tomato

Directions:
First heat your stovetop or outdoor grill to a medium heat.
In a large bowl mix together the ground beef, egg, panko bread crumbs, green onion, Worcestershire sauce, garlic and salt and pepper. Mix well, but lightly. I ran out of green onions, so I used red. And I used gluten free panko crumbs for my Jesse bear. ūüėČ

Shape into 4 equal sized patties and lay on the grill to cook.

In a small bowl, combine the mayo and sriracha and set aside.

Slice any burgers toppings you’d like, such as avocado, onions or tomatoes. And maybe some shredded¬†cabbage or fresh baby spinach.

Flip the hamburgers carefully after about 4 minutes and cook through on the other side about 4 minutes more, or until desired doneness.

Toast the burger buns if desired on the opposite side of the grill.

Assemble the burgers, dividing the sriracha mayo, mozzarella cheese and other toppings equally among all four burgers.

I have to say this burger was delicious! Mouth watering and¬†reminiscent of¬†a tropical spicy meatloaf burger. I will make this again! And you may need some milk for this one. ūüėČ

I’ve been itching to share this sneaky recipe with you all. And I’ve been itching to make some stroganoff meatballs over mashed potatoes with another batch. You see, I made a double batch, fully intending to make two recipes out of these, ¬†and I LEFT THEM ON THE COUNTER ALL NIGHT! Gah, the horror—I HATE wasting food.

But there is no need to hold out on sharing these Gluten Free Sneaky Double-Meat-Balls any longer. You can still use them in spaghetti and marinara, or on a meatball sub, or swimming in sweet honey BBQ sauce.

You see, the trick to these meatballs is they are cooked in the sauce. And they get every bit more tender in their saucy bath. And the sneaky part…they are full of bits of vitamin pack cabbage that you really can’t see at all, or taste whatsoever, but the kids get that dose of veggies they need.

For a double batch to make two meals, follow the ingredients and directions below. For a single batch, cut the recipe in half. Have fun mushing and mixing!

Ingredients:
1 lb ground beef
1 lb ground pork
2 slices gluten free multi grain bread
1/2 cup cabbage, grated
1/2 cup onion, diced
2 gloves garlic, minced
2 eggs, slightly beaten
1 Tb Italian seasoning
1 tsp salt
1/2 tsp pepper

Directions:
In a small food processor, break down the gluten free multi grain bread into fine crumbs.

Combine all the ingredients in a large bowl and mix well. You can use a stand mixer or take off your rings and mix with your bare hands. It’s completely fine either way.

Next roll the mixture into 1 1/2 meatballs, making 32 meatballs for a half batch and 64 meatballs for a double batch.

Cook the meatballs in simmering liquid about 20-25 minutes until cooked through. You can even cook these meatballs in a soup. They are very versatile.

To save the second batch for later, boil in water and freeze on wax paper until set, then transfer to a plastic ziplock bag for freezer storage, up to 2 weeks. Reheat in sauce of choice.

My husband and I were lucky enough to go out to dinner the other night with our church small group. It was great to get out and enjoy a meal without the kids. But my Parmesan Crusted Chicken and Mashed Potatoes from BJ’s was so good I had to bring it back to my kids. In burger form of course. And why not throw in “quick”-just 15 minutes to a gourmet burger.

This week’s 15 Minute Suppers had a theme. Gourmet burgers. And what’s more gourmet than inspiration from a delicious meal?

In this burger I packed the juiciness of white meat chicken, the savory goodness of mashed potatoes, and the crispiness of crusted parmesan cheese. All this topped with a lemony cream sauce and ripe tomatoes with basil. Yep, all the flavors of a complete dinner.

My husband said I should call these Minute Burgers, because my finicky Jesse polished these off before my husband and I even hit the table. I made Jesse a special gluten free version with brown rice bread. He loved it-all the way up to his milk mustache.

Parmesan Crusted Chicken Burgers

Ingredients:
1 lb ground chicken breast
1 cup wavy potato chips, crushed
1/4 cup olive oil mayonnaise
1 tsp salt
1/2 tsp pepper

2 oz Neufch√Ętel cream cheese
1/2 Tb butter
1 Tb lemon juice
1/4 tsp garlic salt

3/4 cup italian style diced tomatoes

4 potato burger buns
4 Tb spreadable butter
1/2 cup shredded Parmesan cheese

Directions:
Begin by preheating a large stovetop grill over medium high heat and a non-stick toaster skillet over medium heat.

Add the ground chicken to a medium bowl. In a mini food processor or with a rolling pin, quickly process the 1 cup of potato chips into fine crumbs. Add the potato chips and mayonnaise to the chicken. Add the salt and pepper. Mix well and form into 4 patties.

Lightly spray the griddle with cooking spray and carefully place the chicken patties on the grill. Cook on one side for about 4 minutes.

Meanwhile combine the cream cheese and butter in a small microwave safe bowl and heat on high for 30 seconds, stirring halfway through cooking time. Remove from the microwave and stir in the lemon juice and garlic salt.

Spoon 3/4 cup of the Italian diced tomatoes from a can and set aside into a small bowl for later use.

Gather 4 homestyle potato burger buns, or any combination of gluten free bread and buns. Spread 1 Tb spreadable butter on each of the top buns and sprinkle each with 2 Tb shredded parmesan cheese. Press lightly to stick.

Flip the chicken patties over to cook on the other side for another 4 minutes.

Carefully press the top buns with the cheese, cheese side down on the non-stick toaster skillet.

Cook for 2-3 minutes until golden brown and carefully remove from the skillet. Toast the bottom buns for another minute and assemble the burgers.

Place the bottom bun on a plate, then top with a chicken patty. Spread 1/4 of the lemon cream sauce on the patty and top with 1/4 of the dice tomatoes. Sprinkle with additional parmesan cheese if desired and top with the parmesan crusted potato bun.

Serve immediately and enjoy with a side of potato chips or side salad.
