Stirrings® has a variety of flavors, like Simple Bloody Mary, Simple Peach Bellini and even 5 Calorie Margarita Mix!  I chose my favorites from their Simple Mojito mix AND Simple Lemon Drop Martini mix, with  Cosmopolitan AND Lemon Drop Rimmers.  Since I could only make one recipe for this challenge, I decided to share a sweet and tangy Mango Spice Lemon Drop Martini.

The inspiration for this recipe came from the candy section in the store, no lie.  I spied these yummy chile coated mango lollipops and I knew they would be the perfect “olives” for my martinis.

With a dash of chile lime salt and some thick mango nectar, this Mango Spice Lemon Drop Martini is sure to ring in some spice to your New Year.

Mango Spice Lemon Drop Martini

Ingredients

    For the Drink

  • 6 Tb (3 oz.) Stirrings® Simple Lemon Drop Martini cocktail mix
  • 6 Tb (3 oz.) Mango Nectar
  • 6 Tb (3 oz) vodka (your favorite brand!)
  • 1/2 tsp chile lime salt
  • 1 cup ice
  • For the Rim

  • 1 tsp Stirrings® Lemon Drop Martini Rimmer®
  • 1 tsp chile lime salt
  • Garnish

  • 2 chile coated mango lollipops
  • 2 lime wedges or slices

Instructions

  1. Wipe the rims of TWO martini glasses with a paper towel dampened with water. Dip each glass into rim mixture, coating the rim well with salted sugar.
  2. Insert lime slice onto end of each mango lollipop stick and set into each glass.
  3. Add ice to a shaker glass. Add remaining drink ingredients. Shake well until cold and combined. Strain half of mixture into each garnished martini glass. Enjoy.

A little over one year ago I had a reunion with a past favorite of mine. Mexican hot chocolate, also know as champurrado. When I found out I was doing Choctoberfest I immediately knew I had to make it!

During the last months of my pregnancy into the first months of my daughter’s life, I would crave this sweet almost porridge-like beverage made with spiced Mexican chocolate, rich milk and enriched corn flour.

And of course I’d top this with gooey marshmallows and graham cracker crumbs!

And look, I passed the love on directly to my beautiful daughter! She sports her #choctoberfest mustache well!

Champurrado is typically made with piloncillo, a dark brown cone of sugar with a molasses flavor. However, the abundance of Imperial sugar in my house was all the more reason to take advantage of the finely granulated, non GMO sweet stuff.

So here’s my variation of Champurrado (Mexican Hot Chocoloate) made S’mores style.

S’mores Champurrado

Prep Time: 5 minutes

Cook Time: 20 minutes

Total Time: 25 minutes

S’mores Champurrado

Ingredients

  • 3 cups water
  • 2 sticks cinnamon
  • 1 star anise
  • 2 cups milk
  • 1/4 cup plus 2 Tb masa harina (corn flour)
  • 1/3 cup Imperial sugar
  • 2 Tb molasses
  • 5 oz Ibarra Mexican chocolate
  • 1/2 cup mini marshmallows
  • 1 Tb graham cracker crumbs

Instructions

  1. In a 2 quart sauce pan or larger, boil 3 cups water with 2 cinnamon sticks and 1 whole star anise. Cover and simmer on low heat until water darkens, about 10 minutes. Carefully remove spices from hot water.
  2. Slowly stir in the Mexican chocolate and whisk until chocolate melts. Add the Imperial sugar and molasses. Whisk in the milk and masa harina and mix until blended. At this point you can continue whisking until frothy, or use a molinillo (a wooden blender whisk) or transfer to a blender or frother.
  3. Simmer and whisk until thickened and frothy, about 10 minutes.
  4. Ladle into 4 large mugs. Top each with 2 Tb mini marshmallows. Brown with a kitchen torch if desired and top with a sprinkle of graham crackers crumbs. Serve.

El Papa Doble Grapefruit Daiquiri

Ingredients

  • 2 oz light rum
  • 1/2 oz pomegranate or cherry liquor
  • 3/4 oz fresh lime juice
  • 1/2 oz fresh grapefruit juice
  • 1/2 oz simple syrup
  • ice cubes
  • lime or grapefruit slice, for garnish

Instructions

  1. Combine rum, liquor, juices and simple in a shaker glass filled with ice and shake well until frothy. Strain into a chilled glass and garnish with a citrus twist of choice. Drink happy.

It is full of classic and creatively twisted cocktails from the bars of Manhattan, New York.

One drink that stood out to me is the classic ’21’ Traditional Bloody Mary. It’s so simple, yet was frequently ordered by the businessmen of Manhattan. In fact, some would say the Bloody Mary is a traditional hang over drink, no? Probably because of the rich vitamin C in the tomato juice and the spice of the tobacco and black pepper.

Another long day at work means a refreshing and satisfying after work treat. My kids get after school snacks, so why can’t I get an after work snack?

And I’ll get it done in less than 15 minutes so I can get dinner going for everyone too.

I like smoothies because you can create almost anything. It tastes like a meal and fills you up like a meal.

Especially this Caramel Banana Cheesecake Smoothie. It’s full of Potassium rich bananas, protein filled low fat cottage cheese, probiotic packed low fat organic vanilla yogurt and fiber full oats. With little bits of other goodies like sweet caramel, spiced cinnamon and delicious vanilla. Not to mention a sprinkling of shortbread cookie.

Yea, that’s a meal.

Ingredients:
1/2 cup low fat cottage cheese
1/2 cup nonfat organic vanilla yogurt
1 cup low fat milk
1 cup Ice
1 1/2 large bananas
1 oz Neufchatel cream cheese
1/4 cup dry oats
2-3 packets Truvia sweetener
1 Tb caramel syrup
dash cinnamon
1 tsp vanilla extract

Directions:
Throw everything in the blender except the ice and blend well.

Add the ice cubes and blend until combined.

Then garnish with additional caramel syrup streamed inside 2 large glasses or 4 small glasses, and fill with smoothie mixture, then top with crushed cookies.

Easy peasy.

Caramel Banana Cheesecake Smoothies

Ingredients

    Smoothie

  • 1/2 cup low fat cottage cheese
  • 1/2 cup nonfat organic vanilla yogurt
  • 1 cup low fat milk
  • 1 cup Ice
  • 1 1/2 large bananas
  • 1 oz Neufchatel cream cheese
  • 1/4 cup dry oats
  • 2-3 packets Truvia sweetener
  • 1 Tb caramel syrup
  • dash cinnamon
  • 1 tsp vanilla extract
  • Garnish

  • 2 Tb caramel syrup
  • 1 shortbread cookie, crushed

Instructions

  1. Put all ingredients in a blender except the ice and blend well.
  2. Add the ice cubes and blend until combined.
  3. Garnish with additional caramel syrup streamed inside 2 large glasses or 4 small glasses, and fill with smoothie mixture, then top with crushed shortbread cookie if desired.

Rise and Shine-Orange Julius Smoothie

Cruising the boulevard, walking the shopping mall and sipping on a cold and frothy Orange Julius. That’s one of my fondest memories. When my husband and I began dating 18 years ago there were two things we would almost always get at the shopping mall: a Cinnabon Cinnamon Roll and an Orange Julius.

I love an Orange Julius. The special way the orange juices and frothy layers separate into orange creamsicle layers is truly unique. We enjoyed this sweet refreshing treat so much that I began making our own pitchers of the stuff right after we got married, when we got our first apartment.

This delectable combination featured fresh squeezed orange juice-trust me, no other is better, sweet sugar and a bit of egg whites for frothiness. Well I’ve been blessed to have plenty of juicy oranges on hand lately from my in-laws abundance on their orange trees, but unfortunately, raw, even pasteurized egg whites are not in my pregnant forte. So I came up with an easy and just as frothy substitute.

Eating Clean Around the World and a Book Giveaway

What’s your resolution for the New Year? Is it organizing your life? Is it getting rid of household clutter? Is it spending more quality time with the family? Is it getting more exercise? Perhaps it is making better food choices for better health, like eating clean?

So what exactly is eating clean? Eating clean doesn’t always have to mean steamed vegetables and plain proteins. I love to shop along the outside of the grocery store. Take a look at your pantry and your refrigerator. Which of these has more abundance of foods? Which of these has a longer shelf life? We all know, the longer the shelf life, the more processed crud is crammed into the food right? But yet we still buy them! And the foods in our refrigerator are consumed quite quickly-because of their freshness factor!

Now the challenge. I challenge you this year to shop more on the outskirts of the grocery aisles and less in the middle. Buy whole wheat pastas and fresh herbs and vegetables and skip the packaged “helper” meals. Buy lowfat milk and natural cheeses and skip “cream sauces”. Stock up on packaged beans and lentils and skip the canned ones packed in sodium.

Orange is the new white! Substitute sweet potatoes for white. Choose fresh or frozen vegetables and avoid the ones sitting on the shelf for months. Eat more fruit! Fresh and frozen are all the rave.

Whole grains are cool! You don’t know how many times I’ve swapped whole grains in my kid’s food, or added oats to their pancakes and they had no clue. Make a cake from scratch and sneak in some whole wheat flour and ground flax seeds. Substitute apple sauce and fat free greek yogurt for the oil and butter in your baking. Look for raw cookie recipes like raw date cookies over butter filled sugar cookies.

Add plenty of healthy fat foods like avocados, olive and canola oil, nuts and seeds to your diet. And don’t forget that ever forgiving and satisfying rich dark chocolate. Consumed in moderation, it is a guilt free treat.

I spent the last month of last year preparing some additional clean eating meals for my family and readers. These meals are so rich and delicious, you will forget they are good for you. And some may be a bit higher in calorie, but added up with the healthy fats, they are still body beneficial.

New Blessings and a Banana Key Lime Protein Smoothie

This year is a new blessing. Our family has been focusing on renewing ourselves! With new diet plans, exercise plans and focusing on our mental health and well being. We’ve been busy arranging behavioral and speech therapy appointments, doctor check ups and figuring out what February may bring.

It has literally been a New Year for my family of Famished Fish. Within the last week the Lord has opened up our eyes to change. My husband has been made available in the past 6 months, by the blessings of God, to focus his time on the family, especially our Finicky Shark, Jesse, who has more and more appointments and therapies booking up. Finally after a two years of being diagnosed with ADHD and over a year and a half after being diagnosed with Autism and literally getting no outside help beyond Special Day Class at school and his IEP, Jesse is starting the therapies he needs to succeed in life socially and mentally. And I have been swamped at work with new expansions and directions of our company, and much, much growth. New accounting divisions are on my lap and my time is limited and I am longer able to pick up my boys from school and take them to appointments. Yes, by the grace of God, I have the best husband.

Well, I got a little off track here. But my point is, this year we are focusing on family, life and togetherness. We have been exercising daily as a family, really! My boys have joined in on our sessions of T25 and even take turns on the treadmill with us!

Yep, with all the New Year’s resolutioners out there, we are getting back on the fitness train. We have a fun day ahead of Knott’s Berry Farm, roller coasters (Jesse’s latest obsession), walking and site seeing. So before that, I had to hit up day four of T25 Ab Intervals. Wow, did that kill me!

And I needed a refreshing post workout chiller packed with protein and flavor. But I also wanted something citrusy. I’ve been dying to make something with key lime and yogurt as a refreshing and light dessert, and this Banana Key Lime Protein Smoothie was just the trick! My Finicky Sharks say, skip the key lime. But a for a grown up craving pour it in!

I always thrive on my family’s support with this website. In fact, Jesse helped me picked my cover shot! He just has an eye for good looking food!

I hope you have these simple ingredients at home. You can use the juice of one lime if you don’t!

Ingredients:
1 cup water
1 scoop sugar free vanilla protein powder (I use Synthesis 7 Protein which packs even more protein and WW points)
1/2 cup Fage fat free plain Greek yogurt
1/3 cup dry oats
1/2 large banana
5 ice cubes
2 Tb instant vanilla pudding mix
1 Tb key lime juice (or juice of one lime)
1/4 tsp cinnamon

Garnish with:
2 Tb whipped cream
dash cinnamon

Smoothie ingredients

Mix all the ingredients in a blender until smooth.

    For the Smoothie

  • 1 cup water
  • 41 g sugar free vanilla protein powder
  • 1/2 cup Fage fat free plain Greek yogurt
  • 1/3 cup dry oats
  • 1/2 large banana
  • 5 ice cubes
  • 2 Tb instant vanilla pudding mix
  • 1 Tb key lime juice
  • 1/4 tsp cinnamon
  • For the Garnish

  • 2 Tb whipped cream
  • dash cinnamon

Instructions

  1. Mix all the Smoothie ingredients in a blender until smooth.
  2. Garnish with whipped cream and cinnamon.

Notes

Makes one main dish (breakfast or post workout) serving or two snack size servings.
