Hey welcome to part 2 of my garlic week post! And Happy Birthday to me! Yes, today is my birthday, so I thought what better way to celebrate garlic week than with one of my favorite family recipes!
I always loved the smell of my Oma’s beef rouladen.
Little rolls of beef pounded thin and filled with bacon and roasted bell peppers, with savory garlic baked into all the crannies. They look so perfect when you cut into them!
She would always serve them with the fluffiest mashed potatoes or German Spaetzle (German egg dumpling style noodles). The trick to her mashed potatoes is the pressure cooker. It really does make all the difference. If you don’t have one, you can still make them the traditional way of boiling in water first. I always knew when the potatoes were almost done when I heard the pressure cooker whistle. Oma always had those potatoes whipped up in no time.
I never realized how much prep was behind her beef rouladen though, but I also never realized how easy and quick it was! Once you have the ingredients laid out, it’s easy peasy.
This was the first time I’ve made these and they came out perfect the first time. My two year even excitedly helped me! Making memories with my girl is always the best!

Hungarian Beef Rouladen and Garlic Mashed Potatoes – #4theLoveofGarlic

Enjoy savory Hungarian Beef Rouladen filled with roasted bell peppers and mashed garlic, mustard and spices with Whipped Garlic Mashed Potatoes as an authentic treat.
- 2 lbs beef round, pounded thin to 1/4" thick
- 12 oz bacon (8 strips)
- 8 oz roasted bell pepper strips
- 1/4 cup country Dijon mustard
- 8 cloves garlic, pressed
- 1 Tb paprika
- 2 tsp salt
- 2 tsp pepper
- 3 Tb canola oil
- 2 1/2 cups hot water
- 2 beef bouillon cubes
- 3 Tb corn starch
- 1 cup cold water
- 1 clove garlic, pressed
- 3 pounds potatoes, golden, red or russet, peeled
- 1 cup water
- 1 1/2 tsp salt
- 5 cloves garlic, peeled
- 6 Tb unsalted butter
- 1 cup warm milk
- 1 Tb dried salad herbs or chives
- 1/2 tsp black pepper
For the Beef Rouladen
For the Garlic Mashed Potatoes
- Preheat the oven to 350F.
- Pound beef to 1/4" thin, then divide into eight equal 4 oz portions.
- Combine paprika, salt and pepper in a small dish. Measure out the mustard in another small dish. Measure out the bell pepper strips in a small bowl. Cut 8 bacon strips in half. Lay each piece of beef out on a flat prep surface, piecing odd pieces together if needed.
- Rub 1 clove of minced garlic on each piece of beef. Sprinkle with a bit of spice mixture. Spread 1/2 Tb mustard on next. Top with about 4 strips roasted bell peppers. Follow with 2 half pieces of bacon. Roll up jelly roll style and secure with toothpicks. Repeat process for all pieces of beef, using all of spice mixture for inside of rolls.
- Heat 3 Tb canola oil in a large skillet over medium heat. Using tongs, brown beef rolls on each side about 6 minutes total. Transfer browned beef rolls to a baking dish. Set aside skillet for later use, do not wash.
- Dissolve bouillon cubes in hot water and pour over beef in baking dish. Cover and bake for 30-35 minutes.
- Meanwhile prepare the mashed potatoes. Peel and cut potatoes into large chunks.
- Transfer potatoes to a pressure cooker and sprinkle with salt. Add peeled garlic cloves and 1 cup water. Cover and bring to pressure in pressure cooker. Maintain pressure in cooker for 8 minutes. Release pressure naturally.
- Do not drain potatoes. Transfer entire contents to a large mixing bowl. Add butter to bowl and mash with potato masher lightly.
- Add dried herbs and pepper and warm milk all at once. Using a hand mixer, mix at low speed until smooth. Do not overmix! Transfer to a serving bowl and cover to keep warm.
- When beef rouladen are done, use tongs to carefully transfer to a serving platter. Strain cooking liquid into reserved skillet. Return to a boil, scraping the bottom as needed. Dissolve corn starch in 1 cup cold water. Slowly whisk into beef broth. Stir in last clove of pressed garlic. Cook and stir until thickened to a gravy. Ladle over beef rolls and serve with potatoes.
