Sure the fact that these heart heathy sandwiches were cut into a heart-pun intended-may have brought a little bit of interest to these sandwiches. Or the melting dark chocolate and gooey cheese dripping out the sides may have also contributed to that factor. Or they could have just been hungry. But I choose to believe that maybe, just maybe, these sandwiches were actually good enough for a kid! Say what? I know-it’s just too gourmet!!

The sweet dark chocolate ties well with the creamy brie and lightly salted sourdough. Try it you must. Especially with Just Hemp Foods hemp seed oil. The nutty, healthy glaze it adds to the bread is a plus!

Grilled Brie Cheese and Dark Chocolate Sandwiches

Ingredients

  • 4 large slices sourdough bread
  • 4 oz sliced brie cheese
  • 1/4 cup dark chocolate chips
  • 1 tsp fresh basil from a tube
  • 2 Tb Just Hemp Foods hemp seed oil (or olive oil)
  • pinch sea salt

Instructions

  1. In a small dish, mix together the hemp seed oil, basil and sea salt.
  2. Using a basting brush, brush the oil mixture on the outsides of the sourdough bread.
  3. Sandwich 2 oz of sliced brie and 2 Tb chocolate chips inside each of two bread slices.
  4. Place each sandwich (there will be two) on the griddle set over medium and grill on each side, turning after 2 1/2 minutes, until golden brown.
  5. Slice each sandwich in half to serve 4.

I’ve come to the conclusion that natural date and nut energy bars can be quite addicting. I don’t know how many flavors of Lara Bars I tried when I was pregnant with my little girl, but that was one food that would settle my stomach and fill me up.

I personally can’t think of anything better! And they are so simple to make! All you need is few ingredients and some Just Hemp Foods products-and a food processor.

Gather your ingredients, including Just Hemp Foods hulled hemp seeds, toasted hemp seeds, hemp protein powder and hemp seed oil.

In go the dates, chopped pecans, hemp seeds, flaked coconut, cocoa powder and hemp protein powder.

Next is the vanilla bean paste, hemp seed oil and mini chocolate chips. Add more hemp seed oil if it’s too dry!

Squish tightly into a brick and slice into 8 bars.

Tighten and pack each bar individually if they start to “crumble”.

Melt the chocolate chips in the microwave dip half of each bar. Lay on wax paper to dry.

Ingredients

  • 2 1/2 cup dates
  • 1 1/2 cups pecans
  • 1 oz Just Hemp Foods hulled hemp seeds
  • 1/3 cup plus 1 Tb sweetened flaked coconut (optional)
  • 1/3 cup plus 1 Tb unsweetened cocoa powder
  • 2 Tb Just Hemp Foods hemp protein powder
  • 2 tsp vanilla bean paste
  • 1/2 - 1 Tb Just Hemp Foods hemp seed oil
  • 1/4 cup mini semi-sweet chocolate chips
  • 3/4 cup semi-sweet chocolate chips
  • 1 Tb Just Hemp Foods toasted hemp seeds
  • 2 Tb sweetened flaked coconut (optional)

Instructions

  1. Put the dates, chopped pecans, hemp seeds, flaked coconut, cocoa powder and hemp protein powder in a food processor and process until very well combined.
  2. Add the vanilla bean paste, hemp seed oil and mini chocolate chips. Pulse until combined and mixtures sticks together when squeezed, adding more oil if needed.
  3. Transfer the mixture to a gallon sized zip tight bag or wrap in plastic wrap. Squish tightly into a brick and slice into 8 bars.
  4. Tighten and pack each bar individually if they start to “crumble”.
  5. Melt the 3/4 cup chocolate chips in the microwave for 30 seconds intervals and dip half of each bar. Lay on wax paper to dry.
  6. Sprinkle on toasted hemp seeds and coconut to your hearts desire!
  7. Refrigerate until ready to serve, wrapping in plastic wrap to store after chocolate is set.

If I could open any little shop it would be a candy store or a tamale factory. Every Christmas season I go crazy making tamales or candy-and sometimes both. Either gifting or selling it.

My husband’s old bosses requested almond toffee every year. It was their absolute favorite. They loved it so much they would even order extra. They gave me the idea to start selling my candies. I’d make toffee, truffles, rum balls and fudge.

My personal favorite is fudge. I love getting creative with the various flavors and mix-ins. Just a couple weeks ago at Knott’s Berry Farm I saw so many fudge flavors my wheels were turning and anticipating Christmas candy making.

For this week’s Choctoberfest I decided to make a dark chocolate fudge and spice it up with pumpkin spice for fall-it is October anyway! And Imperial Sugar was the perfect companion to top it off! Instead of presenting my kids with a tray of cookies, I showed off a tray of chocolates. Oh yea, they loved me!!

This particular fudge recipe can be prepared in 5 minutes amd flash frozen for eating within 20. I made mine in the morning and popped it in the fridge for easy slicing after work.

Dark Chocolate Pumpkin Spice Fudge

Ingredients

  • 2 cups dark chocolate chips
  • 1 cup cinnamon chips
  • 1 14 oz can sweetened condensed milk
  • 1 Tb pumpkin pie spice
  • 1 Tb vanilla bean paste
  • 1 Tb Imperial sugar
  • 1/2 tsp colored sugar
  • 1/2 Tb butter

Instructions

  1. Line a 8×8 inch pan with aluminum foil and grease with butter.
  2. In a large microwaveable bowl, add the sweetened condensed milk and cinnamon and dark chocolate chips. Sprinkle in the pumpkin pie spice.
  3. Microwave on high for 2-3 minutes, stirring halfway. When mixture is smooth, add the vanilla bean paste. Stir well and pour into prepared pan. Smooth over top and sprinkle with imperial sugar and colored sugar.
  4. Refrigerate at least one hour or freeze 20 minutes for quicker setting. Remove foil from pan to easily slice fudge with a sharp knife.

A little over one year ago I had a reunion with a past favorite of mine. Mexican hot chocolate, also know as champurrado. When I found out I was doing Choctoberfest I immediately knew I had to make it!

During the last months of my pregnancy into the first months of my daughter’s life, I would crave this sweet almost porridge-like beverage made with spiced Mexican chocolate, rich milk and enriched corn flour.

And of course I’d top this with gooey marshmallows and graham cracker crumbs!

And look, I passed the love on directly to my beautiful daughter! She sports her #choctoberfest mustache well!

Champurrado is typically made with piloncillo, a dark brown cone of sugar with a molasses flavor. However, the abundance of Imperial sugar in my house was all the more reason to take advantage of the finely granulated, non GMO sweet stuff.

So here’s my variation of Champurrado (Mexican Hot Chocoloate) made S’mores style.

S’mores Champurrado

Ingredients

  • 3 cups water
  • 2 sticks cinnamon
  • 1 star anise
  • 2 cups milk
  • 1/4 cup plus 2 Tb masa harina (corn flour)
  • 1/3 cup Imperial sugar
  • 2 Tb molasses
  • 5 oz Ibarra Mexican chocolate
  • 1/2 cup mini marshmallows
  • 1 Tb graham cracker crumbs

Instructions

  1. In a 2 quart sauce pan or larger, boil 3 cups water with 2 cinnamon sticks and 1 whole star anise. Cover and simmer on low heat until water darkens, about 10 minutes. Carefully remove spices from hot water.
  2. Slowly stir in the Mexican chocolate and whisk until chocolate melts. Add the Imperial sugar and molasses. Whisk in the milk and masa harina and mix until blended. At this point you can continue whisking until frothy, or use a molinillo (a wooden blender whisk) or transfer to a blender or frother.
  3. Simmer and whisk until thickened and frothy, about 10 minutes.
  4. Ladle into 4 large mugs. Top each with 2 Tb mini marshmallows. Brown with a kitchen torch if desired and top with a sprinkle of graham crackers crumbs. Serve.
