Shrimp cocktail is one of those appetizers that brings out just that. It’s a small, sexy bite of food and when paired with Spicy Chai Sauce by Intensity Academy, it is heaven in a shot glass. With a few sticks of jicama and carrots, this appetizer is a sure honey pleaser.

Ingredients:
12 ounces of shrimp, peeled with the tail on
1 medium jicama, peeled
two medium carrots, peeled
1/2 cup Spicy Chai Sauce
2 chives, sliced lengthwise (optional)

Directions:
Begin by rinsing and thawing shrimp and blotting with a paper towel to dry. Cut the jicama into long strips about the size of thin french fries. Do the same with the carrots. Pour 2 tablespoons of spicy chai sauce in the bottom of a tall shot glass or appetizer glass. Arrange the jicama and carrots in the middle and 5 shrimp on the outside hanging over the rim.

Garnish with a sprig of chive if desired. Serve immediately.

It’s February! Are you ready for your Valentine? My little Nicolas is ready. He inhaled these cookies as much as my Peppermint Double Fudge cookies! He even insisted on taking the red cookies to Auntie’s house. And of course, he has already asked me to make more.

Which I plan to do…next week. I’ve been crazy busy in the kitchen with #TripleSBites. But of course, I couldn’t miss out on this month’s Fill the Cookie Jar. It’s essential to have cookies in the house at all times! It just is. At least, according to my children.

Now these cookies! Oh my! I literally researched what makes red velvet RED VELVET! You know, it’s actually NOT chocolate? It’s buttermilk and vanilla and red food coloring (or beet extract) and a touch of cocoa powder for brightness.

I made these cookies so spot on that my friend Laura told me she felt like she had just eaten a donut. And these cookies may need a warning label: *Consuming Chewy Red Velvet Cookies during office hours may lead to extreme hyperactivity or random bouts of hysterical laughter.

I don’t know what made them this way, but I think I shall almost call them “happy cookies”!

Oh, and don’t tell the kids, but I added oatmeal for fiber and texture and DARK chocolate M&Ms for antioxidants. 😉  They will never know they are good for them!

Ingredients:
2 1/2 cups flour
2/3 cup quick oats, milled
3 Tb cocoa powder
3 Tb buttermilk powder
1/2 tsp salt
1/2 tsp baking soda
1 cup white sugar
1 cup brown sugar, packed
1 cup unsalted butter (2 sticks), just slightly softened
2 large eggs
1 Tb red food coloring
1 Tb vanilla extract
1 Tb milk
1 11.4 oz bag dark chocolate M&Ms, divided

Directions:

Preheat oven to 400F.

Combine the unsalted butter and sugars in a stand mixer. Cream together and light and fluffy.

Beat in the eggs, red food coloring and vanilla.

In a large bowl, whisk together the flour, milled oats, baking soda, salt, cocoa powder and buttermilk powder. (I used my NutriBullet to mill this to a perfect powder.)

Add half of the dry mixture to the butter mixture and mix until incorporated.

Stir 3/4 cup M&Ms into the remaining flour mixture and add the cookie dough.

Mix well with a wooden spoon. (Using a stand mixer at this point will crack the candy shells, so use a spoon.)

Using a cookie scoop, spoon onto a silicone baking mat or parchment paper.

Add additional M&M candies if desired.

Bake for 8 to 10 minutes. Remove from oven and allow to cool on baking sheet for 5 minutes before transferring to a cooling rack.
