Every time I bake with almond extract my son Angel can smell it in a heartbeat. That aroma is so spot on to amaretto, he usually asks if I put alcohol in it. Ha!

As much as I love amaretto and would love to douse nearly every dessert with the sweet liquor, I stick with almond extract. I love the stuff.

And the way it smells is so heavenly. So when I saw this recipe for Betty Crocker’s Holiday Blossom Cookies I just had to add almonds-and almond extract.

I could almost capture the flavor of a Mexican wedding cookie too-which is one of my holiday favorites.

And chocolate, of course-that ties in perfectly. So I drizzled half of the tender cookies with melted semi-sweet chocolate chips. Yum! And I love the idea of using cookie mix and saving a bit of measuring time!

These soft and chewy cookies were simple to make and taste so rich. The bits of almonds in each bite made this one perfect cookie. I had to put them away before I had none left for my Christmas cookie trays.

Chocolate Almond Sugar Cookies and Blossoms
Ingredients:
2 pouches Betty Crocker sugar cookie mix
1 cup butter
2 eggs
3 tsp almond extract
3/4 cup almonds, finely chopped
1/4 cup granulated or colored sugar
24 almond candy kisses
1/2 cup semi sweet chocolate chips

Preheat the oven to 375F.

In a stand mixer, cream the butter until fluffy. Beat in the eggs and almond extract.

Beat in one pouch of sugar cookie mix.

Beat in the chopped almonds. Then beat in the second pouch of sugar cookie mix.

Scoop out one dozen balls of cookie dough using a large cookie scoop.

Roll the cookie balls smoothly then roll in granulated sugar.

Or roll in colored sugar. Or both.

Whatever suits your fancy.

Bake 375F for 8-10 minutes.

Immediately lightly press a cold chocolate almond kiss on each of half the cookies.

Cool on baking sheet one minute before transferring to a cooling rack.

Melt chocolate chips in a ziplock bag for about 1 minute, squishing with your fingers at 15 second intervals. Cut a tip off the corner of the bag and pipe on the chocolate on the other half of the cookies.

Repeat with the remaining cookies, making 4 dozen.

Enjoy the festive beauty of these cookies with a tall glass of milk or sweet hot chocolate.
