Christmas Eve is a typical hustle and bustle of donning fancy clothes, packing gifts in separate boxes for separate houses and grabbing trays of cookies and side dishes on our way out the door.
It’s a crazy blur of excitement. MERRY CHRISTMAS EVE!!!!!

That’s why I made these Fiesta Turkey Jack Sausage Bites two days ago. I knew I could just pop them back in the oven for 10 minutes and bring them to the next Christmas party.
And they were so simple to make. This lower fat version of the classic Bisquick Sausage Cheese Balls is bursting with mexican spices and flavor. And almost zero greasiness. Your party guests will love these!

My finicky shark especially loved them! He even added ketchup for a kid friendly addition. I mean, it is sausage after all. 😉  And these are guilt free and full of lean protein.

Fiesta Turkey Jack Sausage Bites
Ingredients:
3 cups flour
4 1/2 tsp baking powder
1 tsp salt
1 tsp red pepper flakes
3/4 tsp black pepper
1/2 tsp cumin
1/2 tsp garlic powder
1/2 tsp paprika
1 lb Monterey Jack cheese, shredded
1 lb turkey breakfast sausage
3 Tb butter, melted

Directions:

Preheat the oven to 400F.

In a large bowl or stand mixer, whisk together the flour and seasonings.

Crumble in the sausage and combine well, with a mixer or with clean hands.

The duo from heaven. Or at least the chocolate gods. I could eat these cookies all day. I think my 4 year stole at least 5 of these when I baked them this Sunday. Every time I turned around a cookie was missing from the cooling rack.

These super chocolaty cookies are filled with fudgy goodness and a near brownie texture, with a lightly crisp exterior and a super moist and sticky interior. And the sweet sticky peppermint marshmallows add all the gooey appeal a 4 year old (and mommy) craves!

Double Chocolate Peppermint Marshmallow Cookies
Ingredients:
3 cups flour
2/3 cup cocoa powder
1/2 tsp baking soda
1 cup sugar
1 cup brown sugar, packed
1 cup butter, softened
2 eggs
2 tsp vanilla extract
2 Tb instant coffee granules
1 cup of semi-sweet chocolate chips
8 oz peppermint marshmallows, frozen

Directions:
Preheat the oven to 400F.

In a medium bowl whisk the flour, cocoa powder, and baking soda together and set aside.

Cream together the butter and sugars in a stand mixer until light and fluffy.

Add the eggs, vanilla extract and instant coffee granules and beat well.

Line a baking sheet with parchment paper or a silicone liner and lightly spray it with cooking spray.
Using a large cookie scoop, scoop out a 2 Tb portion of cookie dough and stuff 5 frozen marshmallows in the center. Fold the cookie dough around the cold marshmallows and roll to smooth.

Every time I bake with almond extract my son Angel can smell it in a heartbeat. That aroma is so spot on to amaretto, he usually asks if I put alcohol in it. Ha!

As much as I love amaretto and would love to douse nearly every dessert with the sweet liquor, I stick with almond extract. I love the stuff.

And the way it smells is so heavenly. So when I saw this recipe for Betty Crocker’s Holiday Blossom Cookies I just had to add almonds-and almond extract.

I could almost capture the flavor of a Mexican wedding cookie too-which is one of my holiday favorites.

And chocolate, of course-that ties in perfectly. So I drizzled half of the tender cookies with melted semi-sweet chocolate chips. Yum! And I love the idea of using cookie mix and saving a bit of measuring time!

These soft and chewy cookies were simple to make and taste so rich. The bits of almonds in each bite made this one perfect cookie. I had to put them away before I had none left for my Christmas cookie trays.

Ingredients:
2 pouches Betty Crocker sugar cookie mix
1 cup butter
2 eggs
3 tsp almond extract
3/4 cup almonds, finely chopped
1/4 cup granulated or colored sugar
24 almond candy kisses
1/2 cup semi sweet chocolate chips

Preheat the oven to 375F.

In a stand mixer, cream the butter until fluffy. Beat in the eggs and almond extract.

Beat in one pouch of sugar cookie mix.

Beat in the chopped almonds. Then beat in the second pouch of sugar cookie mix.

Scoop out one dozen balls of cookie dough using a large cookie scoop.

Roll the cookie balls smoothly then roll in granulated sugar.

Or roll in colored sugar. Or both.

Whatever suits your fancy.

Bake 375F for 8-10 minutes.

Immediately lightly press a cold chocolate almond kiss on each of half the cookies.

Cool on baking sheet one minute before transferring to a cooling rack.

Melt chocolate chips in a ziplock bag for about 1 minute, squishing with your fingers at 15 second intervals. Cut a tip off the corner of the bag and pipe on the chocolate on the other half of the cookies.

Repeat with the remaining cookies, making 4 dozen.

This past month Southern California has finally been blessed with plenty of rain. We are still hoping for more after a long drought. Because of this, we’ve been cozying up quite a bit in our house with the heater on. There is nothing better than staying in bed all warm and toasty. (Yes, I realize 60 degrees is not really COLD, but ya know, we’re spoiled.)

But earlier this week I had promised my sous chef Angel that we would make a candy cane marshmallow pie. And I kept getting busy. And he kept reminding me.

So I crept into his room and stood on the edge of my younger son’s bottom bunk to quietly wake Angel at 5:45am on a school day. Once I got him up, he jumped out of bed excited to spend this quality time with me, as 75% of my time lately has been devoted to his younger sister and the newest member of our family.

This pie was exactly what we were hoping for! After some time in the refrigerator, the marshmallows that we melted down and blended with cream cheese and cool whip seemed to fluff up and take on a new texture that can almost be described as a candy cane moon pie fluff.

It was delicious! And so I encourage you to make this and bring it to your next Christmas party. Your guests will love it!

Candy Cane Kisses Pie

Ingredients:
7 oz candy cane Oreo cookies
3 Tb butter, melted
8 oz jet puffed mini marshmallows
4 oz Neufchâtel cream cheese
8 oz cool whip
13 candy cane kisses, unwrapped
12 milk chocolate kisses, unwraped
3 drops red food coloring (optional)

Directions:

First melt the marshmallows in the microwave slightly. Spray a large bowl with cooking spray and pour in the marshmallows. Heat on high for about 1 min. Let cool at least 5 minutes.

In a food processor, grind the kisses until chopped finely, but not powdered. Set aside.

Melt/soften the butter in a small bowl for 30 seconds. Process the Oreo cookies in a food processor or roll with a rolling pin in a ziplock bag, until they are fine crumbs. Add the butter and mix until incorporated.

Press into the bottom and up the sides of a 9″ pie pan.

In a stand mixer or with a beater, beat the cream cheese until smooth.

Then add in the cooled marshmallows.

Mix until smooth and shiny.

Fold in the cool whip, candy kisses and food coloring.

Spread in the chocolate pie crust and chill at least 4 hours or overnight.

Serve chilled and keep refrigerated.

This recipe was inspired by an idea I saw on Facebook mentioned by a friend for a pie made with melted marshmallows, canned pumpkin and cool whip. I’ve yet to try that one too!

Ingredients

  • 7 oz candy cane Oreoscookies
  • 3 Tb butter, melted
  • 8 oz jet puffed mini marshmallows
  • 4 oz Neufchâtel cream cheese
  • 8 oz cool whip
  • 13 candy cane kisses, unwrapped
  • 12 milk chocolate kisses, unwraped
  • 3 drops red food coloring (optional)

Instructions

  1. First melt the marshmallows in the microwave slightly. Spray a large bowl with cooking spray and pour in the marshmallows. Heat on high for about 1 min. Let cool at least 5 minutes.
  2. In a food processor, grind the kisses until chopped finely, but not powdered. Set aside.
  3. Melt/soften the butter in a small bowl for 30 seconds. Process the Oreo cookies in a food processor or roll with a rolling pin in a ziplock bag, until they are fine crumbs. Add the butter and mix until incorporated.
  4. Press into the bottom and up the sides of a 9″ pie pan.
  5. In a stand mixer or with a beater, beat the cream cheese until smooth. Then add in the cooled marshmallows. Mix until smooth and shiny.
  6. Fold in the cool whip, chopped candy kisses and food coloring.
  7. Spread in the chocolate pie crust and chill at least 4 hours or overnight. Serve chilled and keep refrigerated.

I’ve never been to a cookie exchange. I’ve always wanted to. But then, I may take days to decide on a cookie that I truly cared about sharing. This week the Secret Recipe Club members opted for a virtual Christmas Cookie Exchange for the holidays.

There were so many cookies on Nicole’s blog over at I Am a Honey Bee. I had a hard time choosing between her Maple Walnut Oatmeal Cookies or her Monster Cookies for my kids. If I had seen her latest Chocolate Mint Chip Sandwich Cookies before these ones, I’d have dove in. I’ve been obsessed with chocolate and mint lately.

But this recipe had me at Sea Salt. Just like Nic (hey, she goes by the same nickname as my son!) loves salt over chocolate, I love salt with chocolate!

Ingredients:
1 cup butter, softened
3/4 cup granulated sugar
3/4 cup packed brown sugar
1 teaspoon vanilla extract
2 large eggs
8 oz Neufchatel cream cheese, softened
2 1/2 cups flour
1 tsp baking soda
1 tsp salt
2 cups semi sweet chocolate chips

Directions:
Preheat the oven to 375F.
Combine the flour, baking soda and salt in small bowl and set aside.

In a mixing bowl or stand mixer, beat the softened butter, granulated and brown sugars and vanilla, until light and fluffy.

Beat in the eggs, one at a time, followed by the softened cream cheese. (I used Neufchatel cream cheese instead of full fat, which created a slightly lighter cookie.)

Gradually beat in flour mixture, then the chocolate chips.

Using a cookie scoop, drog by spoonfuls onto ungreased non-stick baking sheets or onto non-stick baking mats or parchment paper.

Bake for 10-12 minutes or until golden brown. Cool on baking sheets for 1 minute before transferring to a cooling rack.
