Strawberry Cheesecake Sweet Rolls

I made some sweet rolls a couple months back that were extra special. My sweet little bun in my oven turned me on to the idea of filling sweet bread with strawberry jam and cheesecake filling. Then rolling them into a log and slicing them in cinnamon roll style and baking them into the sweet goodness that she is.

I found out last week on my 35th birthday that my 4th bundle of joy arriving this October is a sweet little girl. I’m on cloud 9. And her big brothers are ecstatic. And so is her daddy.

And what do you know, these Strawberry Cheesecake Sweet Rolls are all pink and white like the swarm of baby clothes I’m already shopping for.

Rolled up tight like a swaddled baby, these yeast free sweet rolls will have you satisfied in less than an hour. Yum!

Strawberry Cheesecake Sweet Rolls

Dough:
2 cups all purpose flour
2 Tb sugar
4 tsp baking powder
1 tsp salt
3 Tb butter
3/4 cup milk

Filling:
4 oz low fat cream cheese
1/4 cup sugar
1 egg
1 tsp vanilla
1/2 cup, plus 2 Tb strawberry preserves

Icing:
3/4 cup powdered sugar
3 Tb milk
1/2 tsp vanilla

Gather all the necessary ingredients and preheat your oven to 400F.

Combine the dough ingredients in a large bowl and mix together gently until a sticky dough forms.

Knead the dough on a lightly floured surface until soft and smooth. Roll out the dough into a 13×9 in rectangle.

Combine the cheesecake filling ingredients and make red and white stripes across the length of the dough using equal portions of cheesecake filling and strawberry jam.

Roll up jelly roll style into a log and slice horizontally using string or a sharp knife.

Arrange the 9 rolls onto an 8×8 casserole dish sprayed with cooking spray.

Bake for 20-25 minutes until cooked through. Check with a toothpick if needed.

Combine the icing ingredients and drizzle over the sweet rolls.

The baby (my 14 week old fetus) and I have been on a BBQ kick lately. BBQ brisket, BBQ chicken, BBQ sauce on baked potatoes, BBQ sauce and cheese quesadillas, BBQ pork. You get the picture. (And see the picture!)

So earlier this week I thought I’d ask the hubby to boil some chicken breast I had thawing, so when I got home I could shred it and add some BBQ sauce and throw it on a bun. But I wanted a cold potato salad or slaw to go with it. And the only coleslaw I like is KFC’s version. It’s sweet and very fine in texture, so it’s easy to enjoy. And simple to throw together.

So how did I make this entire meal in only 15 minutes? Well I had my hubby precook the chicken, so my chicken was technically precooked. You could use shredded rotisserie here too! The coleslaw was very easy to make with the help of a food processor and marinated extra quickly with the help of plastic wrap. All that was left was tossing the chicken with sweet honey BBQ sauce and toasting the buns while the coleslaw marinated for 10 minutes. Yes, 10 minutes! 2 hours is ideal, but the plastic wrap pulls the liquid up into all the nooks and crannies for a well dressed salad.

BBQ Pulled Chicken Sandwiches with Secret Recipe Coleslaw and Colby Jack Cheese

Ingredients:
1 head cabbage
2 carrots
1/4 white onion
1/2 cup mayonnaise
1/3 cup sugar
1/4 cup milk
1/4 cup water
1 Tb buttermilk powder
1/2 tsp salt
1/8 tsp pepper
2 Tb lime juice
1 1/2 Tb white vinegar

2 chicken breast halves, cooked and shredded
1 cup sweet honey bbq sauce

6 hamburger buns
6 slices Colby jack cheese

Directions:

In a food processor fitted with a grater blade, process the entire head of cabbage in sections at a time. Dump in a large bowl. Process the carrots with the grater blade and add to the cabbage. Repeat the same process with the small piece of onion.

Toss the vegetables to combine well.

In a small bowl whisk together the coleslaw dressing ingredients and pour over the cabbage mixture.

Toss well to coat.

Cover with a piece of plastic wrap pressing on top of the coleslaw and refrigerate.

Meanwhile shred the chicken breast and toss with 1 cup of sweet honey BBQ sauce.

Toast the buns and set aside.

To serve, spoon 1/4 cup of coleslaw on the bottom bun. Top with 1/4 cup of chicken, a slice of Colby Jack cheese and the top bun.

Serve with fresh fruit and additional coleslaw if desired.

All my famished fish enjoyed this meal-every one. My hubby said the flavors were a perfect combination. The BBQ sauce was not overpowering at all and it had just the right touch of sweetness. I myself couldn’t stop rolling my eyes at how delicious this was.

So I was about at that point last Friday afternoon, after enjoying a big enchilada style burrito, but longed for a sweet piece of flan or crispy deep fried ice cream.
