Filled with the melty goodness of sweet artichoke dip and savory caramelized onions along with gooey cheese, these quesadillas are kick in the taste buds.

Artichoke Dip and Caramelized Onion Quesadillas

Ingredients:

3 flour tortillas
3 whole wheat tortillas
1/2 large white onion, sliced thinly
1 Tb butter
dash Worcestershire sauce
1 13.75 oz can artichoke hearts in water, drained and chopped
2 oz Pecorino Romano cheese
2 oz Neufchatel cream cheese
3 Tb mayonnaise with olive oil
1 cup shredded cheese blend such as Monterrey and Cheddar
cooking spray

Begin by sautéing the onions in the butter over medium-high heat in a medium saucepan. Add the worchestershire sauce. Cook and stir until caramelized, about 6 minutes.

Stir in the drained artichoke hearts.

And then the Neufchatel cream cheese and Best Foods Mayonnaise.

Finally stir in the Pecorino Roman cheese and stir to combine.

On a preheated griddle sprayed with cooking spray, lay out 3 whole wheat tortillas and spread with 1/3 of the filling.

Top with 1/3 cup of the shredded cheese blend.

And then top with a flour tortilla.

Heat through and carefully flip over. Heat through once more, about 1 minute per side.

Cut each quesadilla into 4 wedges and serve. Serves four, 3 wedges per person.
