Filled with the melty goodness of sweet artichoke dip and savory caramelized onions along with gooey cheese, these quesadillas are kick in the taste buds.

Artichoke Dip and Caramelized Onion Quesadillas

Ingredients:

3 flour tortillas
3 whole wheat tortillas
1/2 large white onion, sliced thinly
1 Tb butter
dash Worcestershire sauce
1 13.75 oz can artichoke hearts in water, drained and chopped
2 oz Pecorino Romano cheese
2 oz Neufchatel cream cheese
3 Tb mayonnaise with olive oil
1 cup shredded cheese blend such as Monterrey and Cheddar
cooking spray

Begin by sautéing the onions in the butter over medium-high heat in a medium saucepan. Add the worchestershire sauce. Cook and stir until caramelized, about 6 minutes.

Stir in the drained artichoke hearts.

I’m standing in my kitchen and staring into my pantry at packs of nori seaweed and think how much my boys would love some Spam Musubi. I considered Chicken Musubi, but I didn’t feel much like defrosting any chicken breast. So, I get my rice cooking in the rice cooker and gather all my ingredients together and look in my pantry again for Spam and…we have none.

So what do I??? I improvise like any other Supermom would do! Hot dogs could work! Hot dog sushi to be precise! With all the flavor fare of musubi. Yep, it’s a go.

And the process is super simple!

Hotdog Musubi Sushi Rolls

Sushi Rice
2 cups calrose rice, rinsed and drained
3 1/2 cups water
2 Tb rice vinegar
1 tsp sugar
Hotdog Musubi Filling

4 turkey hotdog links
1/4 cup low sodium soy sauce
1/4 cup oyster sauce
1/4 cup sugar

6 sheets toasted nori seaweed
2 Tb sesame seeds, optional
Steam and prepare the rice according to the directions on your rice cooker.
When the rice is done, flip it out onto a sheet pan and sprinkle with the rice vinegar and sugar. Toss and fold with a  turner or rice paddle.

Heat a saucepan over medium heat and add the musubi sauce ingredients. Slice the hotdogs in half lengthwise and add to the sauce. Simmer and heat through until the sauce has thickened and the hotdogs are heated.

Lay a sheet of nori on a bamboo sushi mat and top with sushi rice until evenly covered, pressing down with wet hands or the back of a spoon to cover evenly. Sprinkle with sesame seeds, if desired. Lay a sheet of saran wrap over the rice, press down and carefully flip over on the mat.

Place 1 and 1 /2 pieces of halved hotdog links onto the nori side of the sushi roll.

Using the saran wrap and sushi mat as a guide, roll up over the hotdog links, pulling the saran wrap up as you roll. My son and I made a video for this, but I couldn’t get it to load!

Good food is inspiring. Really good fast food is just as inspiring. I mean, don’t you ever go out to eat and think to yourself, “I could have made this myself at home-even better!” I know I do. And my girlfriend at work tells me this all the time. Almost to where we’d rather just eat in and play in the kitchen.

I mean, at this very moment I have Cheesy Biscuits in the oven right now. Just a bit of Bisquick and Colby Jack Cheese and I feel like I’m eating restaurant worthy biscuits. For a fraction of the price.

That’s why when I tasted Jack in the Box’s Fajita Ranch Melt, I had to make my own to satisfy any further cravings. And the best part about it-it took only 15 minutes to throw this together! No, I didn’t use pepperjack cheese. No I didn’t add taco sauce. I’m anti-spicy food at the moment. But feel free to do so! I used what I had in my pantry and fridge and these sandwiches were bomb-didally-omb!

So how did I make this in 15 minutes from start to finish? I grabbed all my ingredients “Rachael Ray style” and carried them to my kitchen counter, preheated my large non-stick griddle while I sliced veggies and chicken filets, and got to work.

Grilled Sourdough Chicken Fajita Melts

Ingredients:
1 lb chicken breast filets, butterflied
2 tsp paprika
1 1/2 tsp salt
1 1/2 tsp pepper
1 red bell pepper, sliced
1 green bell pepper, sliced
1/2 large onion, sliced thinly
2 tsp canola oil
6 slices Kraft singles, cheddar or pepperjack cheese
8 slices Extra Sourdough Bread
4 Tb buttery spread or margarine (or cooking spray)
6 Tb Hidden Valley Ranch Light Dressing
4 dashes hot sauce (optional)

It helps the quick cooking process to buy thin cut chicken breast filets (or butterflied), so they cook nice and quick-and they have even bread coverage when you bite into that sandwich! If you can’t find thin cut filets, slice them in half yourself.

Begin by brushing the 375F preheated grill with canola oil.

Place the peppers and onions on one half of the grill. Sprinkle with a bit of salt-this tenderizes the veggies quicker. Season the chicken with the paprika and salt and pepper and place the filets on the other half of the grill.

While the chicken and veggies are cooking, about 3-4 minutes, spread the bread slices with margarine. Place 1 1/2 slices of cheese on each of 4 slices.

Stir the veggies around and flip the chicken.

Cook another 3-4 minutes.

Remove the veggies and chicken from the grill and let rest on a platter. Quickly wipe the grill with a paper towel.

Place half of the buttered bread slices on the grill, cheese side up.

Top with a chicken breast filet. Place the other slices buttered side up onto the chicken. Cook 1 minute then carefully flip the sandwich. Cook another minute until golden brown.

Remove sandwiches from heat, carefully open and stuff with 1/4 of the onions and peppers.

The best part about this dinner is my kids all loved it! Of course, I didn’t stuff theirs with peppers and onions. Finicky Shark approved, two thumbs up!

It was one of those nights that I didn’t know what to make for dinner. I had literally no food in my stockpile for something elegant that included a main and side dish. On nights like these it’s easy to turn to a soup or chowder.

Now chowders I can dig-literally dig into. They are typically hearty and never skimp on the vegetables.

Cindy Jamieson has a whole skew of soup and chowder choices on her blog! I was assigned her blog by The Secret Recipe Club. It’s seriously unbelievable how much of this good stuff this woman has on Hun… What’s For Dinner?.

Well I’m crazy picky right now in my pregnant state and I knew I would love a good chowder. Oh my heavens, good this was-sweet, creamy and savory with a salty appeal from the crisp bacon and filling with soft russet potatoes. If you have 30 minutes, which most of us love a quick meal, then you have to try this Creamy Corn Chowder.

The only thing I changed in this recipe is that I made my own creamed corn, because I had no cans of cream corn on hand, and I sprinkled my bacon on top of the soup for a nice garnish. But no worries, I still left the bacon fat in there for flavor!

I love this recipe because it’s gluten free and perfect for my finicky shark with autism!

Now on to the recipe…

Creamy Corn Chowder

Ingredients:
4 slices bacon
1/2 cup onion, diced
1 cup celery, diced
1 cup carrots, diced
2 cups potatoes, peeled and diced
2 cups chicken broth
3 1/2 cups corn kernels
1 can evaporated milk, divided
2 tsp sugar
2 tsp cornstarch
1/2 tsp salt
1/4 tsp pepper
1/4 tsp thyme

First cook the bacon in a large Dutch oven until crisp. Then set it aside on a paper towel to crumble later. Save the bacon fat!

Add the onion, celery and carrots to the bacon fat and sauté until tender.

Add the potatoes.

Meanwhile in a food processor, mix the corn kernels, cornstarch and sugar until the milk from the corn breaks down.

Then add half the can of evaporated milk and pulse a bit more. Set aside.

So I’m sitting here lazing on my sofa watching American Idol with an ice pack on my butt. Psst, who are you voting for?

Apparently my sweet Pit Bull got the bright idea that barking at my son from getting startled while wrapping her cable tie out behind my feet and sweeping me to my butt was a good thing.

I’ve been really lazy lately. No drive for cooking. My nose can’t tolerate much. My stomach can’t either. The joys of baby number 4! So this sitting on the couch thing is working for me at the moment!

But I have been taking some time out to make a couple of cold items. I made some yummy and simply refreshing ceviche tostadas for dinner tonight. I just chopped up one cup of imitation crab meat, one tomato and juiced one lemon. I tossed it all together with a tsp of dried parsley and salt to taste and piled it on top of crispy store bought tostadas. Clean, healthy fit food! My IG photo does NOT do this meal justice, but it was heavenly.

Ingredients

  • 1 1/2 cups chopped apples
  • 1/4 cup shredded sweetened coconut
  • 2 Tb raisins
  • 3 Tb light sour cream
  • 1 tsp sugar
  • 1/4 tsp cardamom
  • 1/4 tsp cinnamon
  • 1 Tb chopped cashews

Instructions

  1. Combine all ingredients in a medium bowl, toss gently and serve immediately.

Notes

Serve on oatmeal or with yogurt and granola or as a fruity side dish.

Rise and Shine-Orange Julius Smoothie

Cruising the boulevard, walking the shopping mall and sipping on a cold and frothy Orange Julius. That’s one of my fondest memories. When my husband and I began dating 18 years ago there were two things we would almost always get at the shopping mall: a Cinnabon Cinnamon Roll and an Orange Julius.

I love an Orange Julius. The special way the orange juices and frothy layers separate into orange creamsicle layers is truly unique. We enjoyed this sweet refreshing treat so much that I began making our own pitchers of the stuff right after we got married, when we got our first apartment.

This delectable combination featured fresh squeezed orange juice-trust me, no other is better, sweet sugar and a bit of egg whites for frothiness. Well I’ve been blessed to have plenty of juicy oranges on hand lately from my in-laws abundance on their orange trees, but unfortunately, raw, even pasteurized egg whites are not in my pregnant forte. So I came up with an easy and just as frothy substitute.

My Childhood Comfort – Spaetzle:German Egg Noodles

Childhood memories of my grandmother’s perfume mixed with the enticing savory smells of German food cooking on the stove and baking in the oven fill my head. Dinner at Oma’s was the best. She always had piles of rouladen, a big bowl of goulash, soft buttery mashed potatoes, sweet honey glazed carrots, broccoli and cauliflower casserole and hot dinner rolls. And mildly sweet flaky cheese and cabbage strudels that I plan to share with you one day as well.

But one of my favorite childhood dishes was her rich and buttery spaetzle, fresh boiled egg noodle dumplings tossed with fresh butter. The spaetzle made a great base for rich goulash and the gravy from the rouladen.

Or shown here with my Quick Marinated Top Sirloin Steak. Just look at those rich egg noodles-so delicious, they melt in your mouth! And my family loves these noodles, especially my most finicky one!

What I LOVE about these noodles is they can be done from start to finish in only 25 minutes. And the process of making these delicious dumplings is quite simple. I use my spaetzle press to make these, but a spoon and a colander work great too, as I’ve used in my earlier days.
