Caramel Apple Cinnamon Rolls

I find myself on the breakfast fence often. Do I want to hop over the sweet or savory side of the fence? I mean, one can never really go wrong with savory. Like Pumpkin Spinach Quiche or Sun Dried Tomato French Toast Sandwich.

But some days those sweet taste buds on the tip of my tongue (or all over if you want to argue with scientific myths), tell me they want something ooey, gooey and full of sticky sweetness. On those days I turn to Spiced and Iced Pumpkin Monkey Bread or these No Rise Caramel Apple Cinnamon Rolls. This guilty breakfast was inspired by Lori Lange from Recipe Girl. But of course, I had to add caramel to this delight! And the fact that I smothered it in Caramel Cream Cheese Icing only added more to the guilt.

Caramel Apple Cinnamon Rolls

Ingredients:
Apple Filling
2 medium apples, peeled and diced
1 Tb butter
1 Tb granulated white sugar
1 Tb brown sugar

Caramel Cinnamon Filling
4 Tb butter, very soft
1 cup brown sugar
3 tsp ground cinnamon
2 Tb Smuckers Fat Free Caramel Topping

Cinnamon Roll Dough
2 cups Gold Medal® All-Purpose Flour, plus 1/2 cup for kneading
2 Tb granulated white sugar
3 tsp baking powder
1 tsp salt
3 Tb butter, melted
1/2 cup unsweetened applesauce
1/4 cup Daisy Light Sour Cream
1/4 cup milk
1 large egg

Caramel Cream Cheese Icing
1 cup powdered sugar
4 Tb cream cheese
3 Tb butter
1 Tb Smuckers Fat Free Caramel Topping

First chop up two peeled apples and mix them with the butter and sugars in a medium skillet.

Cook and stir the apples over medium heat until slightly softened, just about 3 minutes. I left my apples slightly chunky, but you can chop them as teeny tiny as you’d like.

Then get your dough ingredients together…

…and mix them up lightly.

Dump the extra 1/2 cup of flour onto a rolling mat and plop the dough on top. It’ll be sticky. Gently knead the dough, making quarter turns and digging in with the heels of your hands, until the dough is soft and all the flour is worked in.

Add a bit more dusting flour and roll out the dough into a 13×9 in rectangle.

Combine the cinnamon, butter and brown sugar in a small bowl and crumble over the dough.

Top with the cooked sugared apples. Then drizzle with the caramel topping.

Using the rolling mat, roll the dough over from the long end, making a 13″ long roll. Pinch the edges of the dough to seal.

Then using kitchen string, cut the roll into 1-2 inch slices, by sliding the string under the roll and pulling it in opposite directions to slice the roll.

I made 8 rolls out of mine, cuz we like ’em big in our house!

Place the rolls upright in greased oven safe pan to fit. The rolls don’t have to touch because they will rise and meet each other in the oven. I used a round casserole. Recipe Girl used a 13×9 inch pan and cut them a bit smaller. Bake in a preheated 400F oven for 20-25 minutes.

While the rolls are baking, whip up the Caramel Cream Cheese Icing ingredients. When the roll are done, slather on the icing, pop out a hot Caramel Apple Cinnamon Roll and enjoy.

And worry about the guilt later.
