My husband found a new addiction. I mean, he loves my cooking, as most husband’s adore their wives’ hard work, but this particular side dish “is his new favorite French fry”. He has requested these three times this week! But it tastes nothing like a French fry and every bit like a savory, citrusy, roasted potato with a refreshing sea salt appeal. And these are the busy mom’s dream of only taking 20 minutes to roast!
The trick to these potatoes is I start them off in the microwave, with plenty of citrus juice and less oil than most other roasted potato recipes, so by the time they hit the broiler, they are already tender and ready for a quick tanning session.
I love Nellie and Joe’s Key West Lime Juice on these potatoes! They offer plenty of zing and sweet freshness and bring out the herbal oregano mixed in. And these pair perfectly with just about any meal. I made these with Garbanzo Bean Patties the first night, on a Meatless Monday. This fit right along with my Clean Eating Around the World theme. Fresh citrus juice, healthy fat canola or olive oil, health beneficial garlic and fresh herbs.
So let’s get to the simple things-this recipe only needs 7 simple ingredients, a 2 quart baking dish with a lid and a large baking sheet or casserole dish.
6 medium potatoes
1/4 cup lime juice
2 Tb canola or olive oil
4 cloves garlic, minced
1 1/2 tsp sea salt
1 tsp pepper
1 tsp oregano
First scrub the potatoes and cut them into bite sized cubes. Add them to a 2 quart baking dish and stir in the remaining ingredients.
Cover the baking dish and microwave on high heat for 8 minutes. Stir and microwave another 3-4 minutes until tender.
Using potholders, pour the potatoes into a large baking dish or baking sheet.
Broil 6 inches away from heat for 5 minutes, stir and broil 3-5 minutes more.
Transfer potatoes to a serving platter and enjoy with your favorite meal. Serves 6.
