The Healthy Whole Wheat Muffin

This morning in the haste of throwing together a snack for soccer, I thought with the early morning game I should bring the parents of the players a morning treat, too.

I had plenty of bananas on my kitchen table waiting to be mashed into some cookies, cakes, or muffins. So I started with a simple base recipe for a whole wheat muffin. And created something entirely new, featuring bananas, apples, and raisins.

The parents were very appreciative of the freshly baked muffins. And I was pleased they came out perfectly the first batch! So here’s the recipe.

Healthy Banana-Apple-Raisin Muffins (Banapple Muffins)

Makes 36 muffins

4 cups whole wheat flour
1/2 cup ground flax seed
1/2 cup brown sugar, packed
2 tsp baking powder
2 tsp baking soda
2 tsp salt
1 tsp cinnamon
3/4 tsp allspice
2 eggs
1 1/4 cup light sour cream
1 cup low fat milk
1/4 cup canola oil
1 Tb honey
1 tsp vanilla
3 ripe bananas
1 large red apple, chopped (peeled-optional)
1/2 cup raisins

In a stand mixer or by hand, whisk together all dry ingredients. Add remaining ingredients through fruit and mix well. If mixing my hand, lightly mash the banana in a small bowl. If using a stand mixer, add the fruit, one at a time, mixing at medium low speed until well incorporated.

Bake in a preheated 375F degree oven in a 12 cup muffin pan sprayed with cooking spray or lined with cupcake liners. Bake for 15 minutes each batch. Makes 3 dozen muffins.
