An Affair to Remember-Shrimp Cocktail in Tostada Cups

I witnessed an affair a couple of weeks ago-between fresh shrimp cocktail and salty crunchy corn tortillas chips. Affairs are typically frowned upon, but this one was a beautiful site. And it happened on my plate at a restaurant.

And I had to take that affair home with me. After a meeting with the oven those tortillas chips decided they wanted to be one-one big chip to carry that shrimp cocktail.

And there was a born the shrimp cocktail tostada cup.

This tostada cup is filled with fresh shrimp, crispy cucumbers and savory onions. With a little zing of lemon juice and fresh cilantro. Not to mention of bit of spicy jalapeño. To finish it off, it’s drizzled with zesty, corn syrup free cocktail sauce.

A match made in heaven. Yep-that affair had to happen.

What you’ll need
12 corn tortillas
12 oz small salad shrimp, chopped
1 large cucumber, peeled and diced
1/2 medium red onion, diced
2 jalapeños, seeded and diced
1/2 cup cilantro, minced
3 Tb fresh lemon juice
1/2 tsp salt
1/4 cup Kraft cocktail sauce

Preheat oven to 400F.
Combine all ingredients except tortillas and cocktail sauce in a large bowl. Stir.
Warm tortillas over medium heat a on griddle.

Spray a 12 cup muffin pan with cooking spray. Carefully press tortillas into muffin cups, folding in as needed. Spray with additional cooking spray.

Bake in warm oven for 10 minutes. Remove and sprinkle with dash salt.
Let cool on wire rack slightly.
Spoon shrimp cocktail mixture evenly into each tortilla cup.

Plate each one and drizzle with cocktail sauce. Garnish with lemon slices.
Serves 6, two cups per person.

Use corn syrup free cocktail sauce for the best taste.
